Rise and Pies opened on Ninth Avenue in downtown Greeley in 2024. Owner Denise Schieffer spent her career in the brokerage industry before a bread-making class in California got her hooked on sourdough. Her loaves are made with a starter from organic grapes.
Bread flavors include cheddar jalapeño and cranberry walnut, with seasonal loaves like pumpkin. The bakery makes about 20 kinds of pie, along with cinnamon rolls, sticky buns, croissants and pastries. Sourdough bagels are a Thursday item, and German stollen appears during the holidays. Hours have been limited to a few weekday mornings, so check before making a special trip.
